Ketogenic Diet and Brain Cancer

The ketogenic diet is a high-fat, moderate protein, low-carb diet. It's a diet that causes ketones to be produced by the liver, shifting the body's metabolism away from glucose and towards fat utilisation.


The ketogenic diet is an effective weight loss tool and has been shown to improve several health conditions such Alzheimer's, Parkinson's, epilepsy and even cancer.


By reducing the glucose availability to cancer cells and providing ketone bodies for the energy to normal cells, the ketogenic diet could be used as a therapeutic option, especially in highly glucose dependent cancers such as GBM’s and the Glioma family (which I am in).


If you have Netflix watch The Magic Pill!!!!! I also recommend the book Keto for Cancer it can be ordered from Amazon. I also HIGHLY recommend you cut the sugar ASAP! Sugar feeds cancer!!! Also if you eat meat and dairy make sure it is organic and hormone free!!!!

Buffalo Keto Chicken Tenders

Ingredients:

1 lb. chicken breast tenders

1 cup almond flour

1 large egg

1 tbsp Heavy whipping cream

salt/pepper/seasoning preference

6 oz. Buffalo Sauce

Instructions:

Preheat oven to 350 degrees FSeason chicken tenders with salt and pepper. Season the almond flour generously with salt, pepper, garlic powder and cayenne pepperBeat 1 egg together with 1 tbsp of heavy creamDip each tender first in the egg wash and then into the seasoned almond flour. I place the almond flour in a flat tupperware container to make it easier to fully coat the tenders. A ziploc bag also will work good.Place tenders on a lightly greased baking sheet. Bake for 30 minutes, if they are not as crispy as you would like you can additionally broil them for 2-4 minutes.Allow tenders to cool for 5 minutes and then brush with buffalo sauce. They can also be placed back into the tupperware with buffalo mix.Enjoy with your favorite dips! I like homemade ranch and blue cheese the best!

Keto Coconut Almond Cookies or Cupcakes

This one I made up by not having enough of 1 flour so I used coconut and almond flour. They also were a consistent batter so I tried out cookies on a baking sheet and also cupcakes which I put into a greased cupcake tray. So the choice is yours as well as ways to make them all different flavors.

Ingredients:

1 cup coconut or almond flour or mixed

6 tablespoons cream cheese

2 eggs

1 cup butter

1 cup Erythritol 

2 tsp vanilla extract

1 tsp baking powder

1/2 tsp salt

Instructions:

Preheat oven to 325 degrees F and put out the cream cheese and butter to soften. If you don’t have enough time to leave it out ahead of time to soften, you can place it in a microwave for about 10-15 seconds.Place the softened cream cheese and butter in a medium size bowl and mix together using a hand mixer until the mixture is smooth.Add the Erythritol and continue mixing until its well combined then add the eggs and vanilla extract. Continue mixing until it is all smooth.Now add the remaining dry ingredients. Mix it until the mixture forms into a dough. It will be more watery like than a traditional cookie dough.Take a spoon full and place onto a cookie sheet lined with parchment paper or into a greased cupcake tray. There is enough mix for about 50 small cookies so you can try both options!Bake at 325 for about 15 minutes or until golden brown. Ovens vary so just keep your eye on them.

Additional options:

I got creative and made a bunch of different kinds of cookies and cupcakes. I added to some blueberries, peanut butter, Lilys chocolate chips, walnuts, cinnamon and also made a frosting with cream cheese and vanilla stevia. Get creative and have fun with them!!! 


SUPER EASY keto crustless berry cheesecake

Ingredients:

Cream Cheese

Sour Cream

Fresh berries

Vanilla Stevia

Mix together and allow to cool in the fridge for a few hours. 

Honey can also be added. Sometimes I add in some Lilys chocolate chips and when you serve top with some whipped cream.
